If there are solids starting to form and a distinctive buttery smell then you're on the right track. Hold tight for another 24 hours and tune in to part 3, the final part tomorrow.

What you need:
1- 1/2 gal food safe container
1/2 gal whipping cream
1/4 c plain unsweetened kefir
cheese cloth or vented lid
time

Clean and sanitize your container.
Add half your cream
Add kefir
Add the rest of the cream
cover the container with cheese cloth or placing the lid on top. Don't tighten it.

Leave the mix on the counter, out of direct sunlight, for three days.
